Maybe it's just me, but I find that vegetables must be eaten within about two days or they start to go by...which really ticks me off. I think about how much money goes into the garbage when they are not eaten quickly, fresh vegetables are expensive...
I've tried the vegetable bags and containers, but I have to be honest, it's a lot of extra work and I'm not exactly what one would call organized or particular...
Last night as I search my kitchen for something for dinner, I opened my vegetable drawer in the refrigerator and noticed I need to make something to use the veggies I had or I would have to throw them away. I decided to roast them...it was super simple and very good...just how I like it...
I had asparagus, grape tomatoes, mushrooms, yellow squash, red peppers and green onions. I started by chopping them into bite size pieces, I covered a sheet pan with foil and put about a table spoon of safflower oil on it and added the vegetables, a little salt and fresh ground pepper and tossed them around so that each piece was covered.
I put them in a preheated oven of 425 degrees for 15 minutes.
I had left over chicken to go with it...
Yummo! I am a veggie girl, I love them just about every way! Looks delicious! It sure is nice when you throw something together that turns out to be lip-smacking!
