This is the best zucchini bread recipe I have ever made. I found it at allrecipes.com, but I tweaked it a bit. I get lots of compliments and recipe requests .
Zucchini Bread
AllRecipes.com
3 cups of flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 cups sugar3 teaspoons vanilla extract
4 cups grated zucchini
1 cup walnuts (optional)
Directions:
Preheat oven to 325 degrees. Grease and flour two 8x4 pans.
Sift flour , salt, baking powder, baking soda and cinnamon.
Beat eggs, oil, vanilla and sugar in a large bowl.
Add sifted ingredients to the creamed mixture and beat well. Add zucchini and nuts until well combined.
Pour into two prepared pans.
Bake 50-75 mins.(I know that is a wide span to time, the first time I made it I checked it every 15 minutes starting at 45 minutes and with my glass loaf pans it takes 75 minutes.)
Wow, this sounds delicious! And it's my Husband's favorite vegetable, so I'm sure he'll love this!

Hello! That's looks delilcious! One of my babysitters when I was younger (she was a grandma-type) made zucchini bread. I loved it as well as her banana and pumpkin breads.
